Here’s what you’ll need:
1 and 3/4 cups all-purpose flour
1 cup quick-cooking oats
1/4 teaspoon salt
1 and 1/2 teaspoons cinnamon
1 and 1/2 teaspoons baking powder
1 cup sugar
1 cup melted coconut oil
2 eggs
1/4 cup nonfat plain Greek yogurt
1 cup homestyle sweetened applesauce
1/2 teaspoon vanilla extract
1/2 teaspoon Organic Apple Cider Vinegar
Preheat the oven to 425 degrees. Line muffin pan with paper-lined muffin cups.
Whisk all-purpose flour, quick-cooking oats, salt, cinnamon, and baking powder together in a bowl and set aside.
In a separate bowl, cream together sugar and melted coconut oil.
Add eggs to the sugar and oil mixture one at a time and mix well. Add the yogurt, applesauce, vanilla extract, and Organic Apple Cider Vinegar and stir until smooth.
Slowly, add the flour mixture to the egg mixture and fold together. Do not over mix.
Fill muffin cups three-fourths full with batter.
Bake at 425 degrees for 3 minutes. Then, lower oven to 350 degrees and bake for an additional 17 minutes or until a toothpick comes out clean when inserted into the center of the muffin.
Remove muffins from the pan to cool.
Sit back and relax with this tasty fall delight.
