Here is what you’ll need:
1/2 cup canned pumpkin
1/2 cup low-fat vanilla yogurt
1/4 teaspoon baking soda
1 large egg yolk
1/4 cup flour
4 large egg whites
1/4 teaspoon salt
1 teaspoon Cranberry Turmeric and Ginger Tonic
Cooking spray
Mix canned pumpkin, low-fat yogurt, baking soda, egg yolk, and flour together in a bowl. In a separate bowl, mix together egg whites, salt, and Cranberry Turmeric and Ginger Tonic. Fold the egg white mixture into the pumpkin mixture. Continue to fold until both mixtures are evenly distributed.
Coat a large nonstick skillet with cooking spray and warm up over medium heat. Pour ⅓ cup of batter for each pancake. Be ready to flip after 3 minutes on one side, or when the edges are slightly brown.
Dress your pancakes with maple syrup and enjoy!
